Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Line a baking tray with parchment paper or lightly grease it with a little of the olive oil.

  2. 2

    2. In a medium saucepan, combine the celeriac, potato, 1 garlic clove, milk, and enough water to barely cover the vegetables. Add 1/2 teaspoon salt. Bring to a boil, then cook over medium heat for 18 to 20 minutes, until the celeriac and potato are very tender.

  3. 3

    3. Meanwhile, make the crust by mixing the chopped toasted hazelnuts, breadcrumbs, Parmesan, half of the chopped parsley, lemon zest, 1 minced garlic clove, 1 tablespoon olive oil, 1/4 teaspoon salt, and 1/2 teaspoon black pepper in a bowl.

  4. 4

    4. Pat the chicken breasts dry with paper towels. Season both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Place them on the prepared tray and brush with 1 tablespoon olive oil.

  5. 5

    5. Press the hazelnut herb mixture onto the top of each chicken breast to create an even crust. Bake at 220 °C / 425 °F for 20 minutes.

  6. 6

    6. In a separate bowl, toss the red grapes, shallot, white wine vinegar, honey, 1 tablespoon olive oil, a pinch of salt, and the remaining black pepper. After the first 20 minutes of baking, place this mixture around the chicken on the same tray or on a separate tray.

  7. 7

    7. Continue baking everything at 220 °C / 425 °F for 12 to 15 more minutes, or until the chicken reaches a safe internal temperature of 74 °C / 165 °F and the grapes are tender and lightly caramelized.

  8. 8

    8. Drain the celeriac and potato, reserving 2 to 3 tablespoons of the cooking liquid. Blend the vegetables with the butter, 1 tablespoon olive oil, and a little reserved liquid until smooth. Adjust with salt and pepper to taste.

  9. 9

    9. Toss the remaining parsley into the roasted grapes as soon as they come out of the oven for a fresh finish.

  10. 10

    10. Spoon the light celeriac purée onto each plate, top with a hazelnut-crusted chicken breast, and finish with the warm roasted grape and shallot salad around it.

Chef tips

Toast the hazelnuts for a few minutes before chopping to deepen their flavor. If you want the crust to adhere better, press it firmly onto the chicken right after brushing it with oil.

Substitutions

You can swap the celeriac for cauliflower for a milder purée, and use almonds instead of hazelnuts if preferred. Shallot can be replaced with thinly sliced red onion.
