Instructions

  1. 1

    1. Preheat the oven to 220°C / 425°F. Line a large baking tray with parchment paper or lightly grease it with a little of the olive oil.

  2. 2

    2. Place the leeks on the tray cut side up. Drizzle with 1 tablespoon olive oil, season with a pinch of salt and pepper, and sprinkle with 1 tablespoon of the fresh thyme. Set aside.

  3. 3

    3. In a bowl, combine the quick oats, grated Parmesan, breadcrumbs, another pinch of salt, pepper, and half of the remaining fresh thyme.

  4. 4

    4. Season the chicken breasts with salt and pepper. Spread Dijon mustard over the top side of each breast, then press the oat mixture onto them to create an even crust.

  5. 5

    5. Place the chicken breasts on the tray next to the leeks. Drizzle the chicken with 1 tablespoon olive oil. Bake for 25 to 30 minutes at 220°C / 425°F, or until the chicken is fully cooked and the crust is golden.

  6. 6

    6. While the chicken bakes, heat the remaining 1 tablespoon olive oil with the butter in a skillet over medium heat. Add the garlic and cook for 30 seconds without letting it brown too much.

  7. 7

    7. Add the diced green apple and cook for 3 to 4 minutes, stirring, until it starts to soften. Pour in the chicken stock and cook 4 minutes more.

  8. 8

    8. Add the heavy cream and the remaining thyme. Simmer gently for 2 to 3 minutes until you have a light cream sauce. Taste and adjust with salt and pepper.

  9. 9

    9. Serve a bed of roasted leeks on each plate, top with a chicken breast, and spoon over the light apple thyme cream.

  10. 10

    10. If desired, let the chicken rest for 3 minutes before serving to keep it juicier.

Chef tips

For a crispier crust, firmly press the oat mixture onto the mustard and finish the last 2 minutes under the broiler, watching closely so it does not burn.

Substitutions

You can swap the green apple for a firm pear. If you do not have leeks, use sweet onion wedges. For a gluten-free version, use certified gluten-free breadcrumbs and oats.
