Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Line a large sheet pan or baking dish with parchment paper or lightly grease it with a little of the olive oil.

  2. 2

    2. In a small bowl, mix the butter, red miso, honey, minced garlic, lime zest, lime juice, smoked paprika, and 1 tablespoon / 15 ml of the olive oil until smooth and spreadable.

  3. 3

    3. Place the chicken thighs in a large bowl. Season with the salt and black pepper. Rub the chicken with about two-thirds of the miso butter, making sure to coat the skin and top of each piece well.

  4. 4

    4. In the same bowl or another container, toss the butternut squash with the remaining 1 tablespoon / 15 ml olive oil and a small spoonful of the miso mixture, just enough to lightly coat it.

  5. 5

    5. Arrange the chicken on the tray skin-side up and scatter the squash around it in a single layer. Roast for 25 minutes at 220 °C / 425 °F.

  6. 6

    6. Remove the tray from the oven and brush the chicken with the remaining miso butter. Toss the squash so it glazes evenly, then return the tray to the oven.

  7. 7

    7. Continue roasting for 12 to 15 minutes more at 220 °C / 425 °F, until the chicken is deeply golden and cooked through and the squash is tender with caramelized edges. The chicken should reach a safe internal temperature of 74 °C / 165 °F at the thickest part.

  8. 8

    8. Meanwhile, toast the sesame seeds in a small skillet over medium heat for 1 to 2 minutes, stirring constantly, until fragrant. Remove from the heat.

  9. 9

    9. Let the chicken rest for 5 minutes out of the oven. Finish with the toasted sesame seeds and sliced scallions on top before serving with the glazed squash.

Chef tips

For crispier skin, place the chicken on a rack set inside the tray for the last 10 minutes. If the squash browns too quickly, toss it and move it toward the edges of the pan.

Substitutions

You can use boneless chicken thighs and reduce the cooking time slightly. Butternut squash can be replaced with delicata squash or sweet potato. If you do not have lime, use lemon. For a dairy-free version, replace the butter with a firm plant-based alternative.
