Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Place the carrots, 2 whole garlic cloves, and the white parts of the scallions on a sheet pan. Toss with 1 tablespoon olive oil, half of the salt, and a little black pepper.

  2. 2

In a large bowl, combine the chicken thighs with 1 tablespoon olive oil, ground cumin, ground coriander, sweet paprika, the remaining salt, black pepper, and the zest of 1 lime. Rub well to coat the chicken evenly.

  3. 3

Arrange the chicken on the same pan, leaving the carrots around it. Roast at 220 °C / 425 °F for 35 to 40 minutes, until the chicken is golden and cooked through, stirring the carrots halfway through so they roast evenly.

  4. 4

While the chicken roasts, heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the 2 chopped garlic cloves, half of the chopped ginger, and half of the green scallion tops. Cook for 1 minute without letting them brown too much.

  5. 5

Add the jasmine rice to the saucepan and stir for 30 seconds to coat it. Pour in 360 ml (1 1/2 cups) chicken broth. Bring to a boil, reduce the heat, cover, and cook for 15 minutes. Turn off the heat and let it rest, covered, for 10 minutes.

  6. 6

Transfer the roasted carrots, roasted garlic, and roasted scallions to a blender. Add the coconut milk, the remaining 120 ml (1/2 cup) chicken broth, honey, the rest of the ginger, and the juice of 1 lime. Blend until very smooth. Taste and adjust salt if needed.

  7. 7

If you prefer a hotter sauce, pour it into a small skillet and warm it for 2 to 3 minutes over medium-low heat, stirring so the coconut milk and carrot purée combine fully.

  8. 8

Fluff the rice with a fork and add the remaining green scallion tops, the juice of the second lime, and half of the fresh cilantro. Mix gently.

  9. 9

Serve a bed of scallion lime rice, place 2 chicken thighs on top for each portion, and spoon over the roasted carrot, ginger, and coconut sauce. Finish with the remaining fresh cilantro.

Chef tips

For crispier skin, place the chicken under the broiler for 2 to 3 minutes at the end, watching closely. The sauce can be made a few hours ahead and gently reheated before serving.

Substitutions

You can use boneless chicken thighs, reducing the cooking time to 25-30 minutes. Jasmine rice can be replaced with basmati rice. If you do not have fresh cilantro, use parsley, though the flavor will be less citrusy and herbal.
