Instructions
- 1
Preheat the oven to 220 °C / 425 °F. Toss the potatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 1 teaspoon sweet paprika. Spread them on a tray and roast for 20 minutes.
- 2
Meanwhile, pat the chicken thighs dry and season them with the remaining salt, remaining black pepper, dried oregano, and ground chili flakes.
- 3
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Brown the chicken for 3 to 4 minutes per side until nicely colored. Remove and set aside.
- 4
In the same skillet, add the last tablespoon of olive oil, the onion, and the garlic. Cook for 4 to 5 minutes over medium heat until the onion is soft and lightly golden.
- 5
Add the remaining sweet paprika, mustard, Malbec wine, and chicken broth. Scrape the bottom of the skillet to release the browned bits and cook for 4 minutes until the sauce reduces slightly.
- 6
Transfer the chicken to a baking dish. Pour the onion, garlic, Malbec, and mustard sauce over it. Bake at 200 °C / 400 °F for 20 minutes.
- 7
Remove the potatoes from the oven, turn them over, and place them around the chicken in the baking dish or on a separate tray. Cover the chicken with the grated provoleta cheese.
- 8
Return everything to the oven at 200 °C / 400 °F for 12 to 15 minutes more, until the chicken is fully cooked, the provoleta is melted and golden, and the potatoes are tender with crisp edges.
- 9
Let rest for 5 minutes out of the oven. Finish with the chopped fresh parsley and serve the chicken with the rustic potatoes and the Malbec sauce.
Chef tips
For a deeper golden crust, broil for 2 to 3 minutes at the end while watching closely. If you want a stronger flavor, let the chicken rest for 15 minutes with the salt, pepper, oregano, and chili before browning.
Substitutions
You can replace provoleta with provolone or low-moisture mozzarella. Malbec can be swapped for another dry red wine. Parsley may be replaced with chives, though the flavor will be less traditional.
