Instructions

  1. 1

    1. Preheat the oven to 220°C / 425°F. Place the tomatoes, half of the white onion, and 4 garlic cloves on a baking tray. Drizzle with 1 tablespoon vegetable oil, add a pinch of salt and black pepper, and roast for 20 minutes until the tomatoes are browned around the edges.

  2. 2

    2. Meanwhile, season the chicken thighs with half of the salt, the remaining black pepper, ground cumin, sweet paprika, and dried oregano.

  3. 3

    3. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Brown the chicken for 3 to 4 minutes per side, without fully cooking it through. Remove and set aside.

  4. 4

    4. In a small dry skillet, toast the sesame seeds over medium heat for 1 to 2 minutes, stirring constantly, until fragrant. Reserve 1 tablespoon for finishing the dish.

  5. 5

    5. Transfer the roasted tomatoes, roasted onion, 4 roasted garlic cloves, 2 tablespoons toasted sesame seeds, and chicken broth to a blender. Blend until smooth.

  6. 6

    6. In the same skillet used for the chicken, add the blended sauce. Cook over medium heat for 5 minutes, stirring occasionally. Return the chicken to the skillet, partially cover, and cook for 18 to 20 minutes until tender and fully cooked.

  7. 7

    7. While the chicken cooks, place the yuca in a pot with enough water to cover and 1 teaspoon salt. Bring to a boil and cook over medium heat for 20 to 25 minutes until very tender. Drain and remove the tough inner fiber from each piece.

  8. 8

    8. Mash the hot yuca with the butter, warm milk, 2 finely grated garlic cloves, 1 tablespoon lime juice, and a pinch of salt. Mix until you get a soft, rustic mash.

  9. 9

    9. In a bowl, combine the remaining thinly sliced white onion, avocado, radishes, fresh cilantro, 1 tablespoon vegetable oil, 2 tablespoons lime juice, and a pinch of salt. Toss gently so the avocado keeps its shape.

  10. 10

    10. Taste the chicken sauce and adjust with salt if needed. Serve a portion of mashed yuca, add the chicken with plenty of sauce on top or alongside, and finish with the avocado-radish salad and the reserved tablespoon of toasted sesame seeds.

Chef tips

For a deeper sauce, roast the tomatoes until they develop a few deeply caramelized spots. If the yuca feels too firm while mashing, add a little more warm milk, one tablespoon at a time.

Substitutions

You can substitute the yuca with potatoes or malanga if needed. The chicken can be replaced with turkey pieces. For a dairy-free version, use plant-based butter and unsweetened plant milk instead of butter and milk.
