Instructions
- 1
Preheat the oven to 220°C / 425°F. Line a sheet pan with parchment paper and lightly grease it with some of the vegetable oil.
- 2
Place the baby potatoes in a pot with cold water and 1 teaspoon of the salt. Bring to a boil and cook for 15 to 18 minutes, until tender when pierced with a knife.
- 3
Meanwhile, season the chicken with half of the black pepper, half of the garlic powder, the smoked paprika, and 1/2 teaspoon of salt.
- 4
Set up three bowls: one with the all-purpose flour, one with the beaten egg, and one with the panko mixed with 1 tablespoon of the vegetable oil, the remaining garlic powder, and a pinch of salt. Coat each chicken thigh in flour, then egg, then panko, pressing so it adheres well.
- 5
Arrange the breaded chicken on the prepared pan. Drizzle or brush with the remaining tablespoon of vegetable oil. Bake for 22 to 26 minutes at 220°C / 425°F, flipping halfway through, until golden and cooked through.
- 6
In a small saucepan, combine the root beer, Dijon mustard, brown sugar, and 15 g (1 tablespoon) of butter. Cook over medium heat for 8 to 10 minutes, stirring occasionally, until reduced to a glossy, lightly thickened glaze.
- 7
Drain the cooked potatoes and transfer them to another baking tray or oven-safe skillet. Gently smash each potato with the bottom of a glass. Melt 20 g (1 1/2 tablespoons) butter and mix it with half of the chopped dill, a pinch of salt, and the remaining black pepper. Brush the potatoes with this mixture.
- 8
Place the potatoes in the oven alongside the chicken for the last 15 minutes of cooking at 220°C / 425°F, until the edges are golden and crisp.
- 9
For the warm slaw, heat a large skillet over medium heat with the remaining butter. Add the onion and cook for 3 minutes. Add the red cabbage, apple cider vinegar, honey, and a pinch of salt. Cook for 5 to 7 minutes, stirring, until the cabbage softens slightly but still keeps some texture. Stir in the remaining dill at the end.
- 10
Remove the chicken from the oven and brush it with the root beer mustard glaze. Return it to the oven for 2 more minutes at 220°C / 425°F to set the glaze.
- 11
Serve the glazed chicken with the dill smashed potatoes and the warm red cabbage slaw. Spoon over any extra glaze before serving if desired.
Chef tips
For a crispier coating, let the breaded chicken rest for 5 minutes before baking. Do not reduce the glaze too far; it should be thick but still spoonable.
Substitutions
You can use thick chicken breast cutlets instead of thighs, adjusting the cooking time so they do not dry out. Dill can be replaced with fresh parsley, and Dijon can be swapped for mild yellow mustard for a more classic diner-style flavor.
