Instructions

  1. 1

    1. Season the chicken with 4 g (3/4 tsp) salt, 1 g (1/2 tsp) black pepper, 1 g (1/2 tsp) ground cumin, and the garlic powder. Sprinkle the pre-cooked cornmeal over the chicken and toss well to lightly coat.

  2. 2

    2. Heat a large skillet over medium-high heat with 30 ml (2 tbsp) oil. Brown the chicken for 4 to 5 minutes per side until deeply golden and cooked through; the internal temperature should reach 165°F/74°C. Remove and set aside.

  3. 3

    3. While the chicken cooks, toast the pumpkin seeds in a small skillet over medium heat for 2 to 3 minutes, stirring constantly, until nutty and fragrant. Remove from the heat.

  4. 4

    4. Place the guajillo chiles in a bowl and cover with 240 ml (1 cup) hot water. Let them soak for 10 minutes until softened.

  5. 5

    5. In the same large skillet, add 15 ml (1 tbsp) oil, half of the onion, and 2 garlic cloves. Cook for 2 minutes. Add the tomatoes and cook 5 minutes more, until softened and slightly concentrated.

  6. 6

    6. Blend the soaked chiles with their soaking liquid, the cooked tomatoes, the sautéed onion and garlic, the toasted pumpkin seeds, 240 ml (1 cup) chicken broth, oregano, the remaining cumin, 2 g (3/4 tsp) salt, and the remaining black pepper until very smooth.

  7. 7

    7. Pour the sauce into the skillet and cook over medium heat for 6 to 8 minutes, stirring occasionally, until slightly thickened. Return the chicken to the skillet and cook 3 minutes more so it absorbs the sauce.

  8. 8

    8. For the rice, heat a medium saucepan over medium heat. Add the rice and cook for 1 minute, stirring. Add the remaining onion and 1 chopped garlic clove; cook 2 minutes more.

  9. 9

    9. Add the corn, 120 ml (1/2 cup) chicken broth, 120 ml (1/2 cup) water, lime zest, and 2 g (1/4 tsp) salt. Bring to a boil, then cover and cook over low heat for 15 minutes, until the rice is tender and the liquid is absorbed.

  10. 10

    10. Turn off the heat and let the rice rest, covered, for 5 minutes. Fluff with a fork and mix in the lime juice and half of the chopped cilantro.

  11. 11

    11. Serve a bed of corn-lime rice, top with the chicken and plenty of pumpkin seed sauce, and finish with the remaining fresh cilantro.

Chef tips

For an even smoother sauce, strain it after blending. For a gentle smoky note, broil the tomatoes at 450°F/230°C for 8 minutes before blending.

Substitutions

You can use chicken breast instead of thighs, adjusting the cooking time to avoid drying it out. If pumpkin seeds are unavailable, use unsalted sunflower seeds. Long-grain rice can be replaced with jasmine rice, slightly reducing the liquid.
