Instructions

  1. 1

    1. Preheat the oven to 220°C / 425°F. Line a baking tray or dish with parchment paper or lightly grease it with some of the olive oil.

  2. 2

    2. In a large bowl, mix the orange juice, orange zest, soy sauce, 1 tablespoon (15 ml) olive oil, garlic, ginger, honey, black pepper, and salt until well combined.

  3. 3

    3. Add the chicken thighs to the bowl and toss them in the marinade so they are well coated. Let them rest for 10 minutes in a cool spot while you prepare the topping.

  4. 4

    4. In a small bowl, combine the sesame seeds with the scallions and 1 tablespoon (15 ml) olive oil. Set this mixture aside for the crust.

  5. 5

    5. Arrange the marinated chicken on the prepared tray, leaving space between the pieces. Bake for 15 minutes at 220°C / 425°F.

  6. 6

    6. While the chicken bakes, pour the remaining marinade into a small saucepan. Mix the cornstarch with the water until smooth, add it to the saucepan, and cook over medium heat for 2 to 3 minutes, stirring, until you get a lightly thickened glaze.

  7. 7

    7. Remove the tray from the oven, brush the chicken with some of the glaze, and scatter the sesame-scallion mixture on top, pressing gently so it adheres.

  8. 8

    8. Return the chicken to the oven and bake for 12 to 15 minutes more at 220°C / 425°F, or until fully cooked and golden on the outside.

  9. 9

    9. If you want deeper color, switch the oven to broil and cook for 1 to 2 additional minutes, watching closely. Serve the chicken hot with the remaining glaze spooned over or on the side.

Chef tips

For a toastier crust, lightly toast the sesame seeds in a dry skillet for 1 minute before mixing them with the scallions. Do not crowd the chicken pieces on the tray; spacing helps them brown instead of steam.

Substitutions

You can substitute the thighs with chicken breast cut into thick cutlets, slightly reducing the cooking time. Honey can be replaced with maple syrup, and scallions with chives. For a soy-free version, use a comparable soy-free seasoning sauce.
