Instructions

  1. 1

    Preheat the oven to 220°C / 425°F.

  2. 2

Season the chicken thighs on both sides with salt, black pepper, ground cumin, smoked paprika, and ground cinnamon.

  3. 3

Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 3 to 4 minutes per side until deeply golden. Transfer temporarily to a plate.

  4. 4

In the same skillet, reduce to medium heat and add 1 tablespoon olive oil. Add the red onion and cook for 3 minutes, stirring. Add the garlic and cook for 30 seconds more.

  5. 5

Add the chopped plums, balsamic vinegar, honey, and chicken broth. Cook for 4 to 5 minutes, lightly crushing the plums with a spoon to create a rustic sauce.

  6. 6

Return the chicken to the skillet, coating it with the plum glaze. Transfer the skillet to the oven and roast for 12 to 15 minutes at 220°C / 425°F, until the chicken is cooked through and the sauce thickens slightly.

  7. 7

While the chicken roasts, heat the remaining 1 tablespoon olive oil in a medium saucepan. Add the rinsed quinoa and toast for 2 minutes, stirring, until nutty-smelling.

  8. 8

Add the water to the quinoa along with a pinch of salt. Bring to a boil, cover, reduce the heat, and cook for 15 minutes until the liquid is absorbed. Let rest for 5 minutes and fluff with a fork.

  9. 9

Remove the skillet from the oven and add the lemon zest over the chicken and sauce. Let it rest for 3 minutes.

  10. 10

Serve the toasted quinoa as the base, top with the glazed chicken, red onion, and plum sauce, and finish with chopped fresh parsley.

Chef tips

If the plums are very tart, add 1 extra teaspoon of honey. For a smoother sauce, mash the fruit more thoroughly in the skillet before roasting.

Substitutions

You can substitute the quinoa with white rice or couscous. The plums can be replaced with firm nectarines or a mix of plums and cherries. If you do not have balsamic vinegar, use red wine vinegar plus an extra 1/2 teaspoon of honey.
