Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Pat the chicken thighs dry with paper towels and place them in a bowl.

  2. 2

In a small bowl, mix 1 tablespoon olive oil, smoked paprika, 1 teaspoon of the ground cumin, half of the salt, and half of the black pepper. Rub this mixture all over the chicken.

  3. 3

Place the carrots on a baking sheet. Add the remaining tablespoon of olive oil, the ground cinnamon, the remaining cumin, the rest of the salt, and the rest of the black pepper, then toss well to coat.

  4. 4

Arrange the chicken in an oven-safe skillet or on a separate tray, skin side up. Transfer both the chicken and carrots to the oven at 220 °C / 425 °F for 15 minutes.

  5. 5

Meanwhile, make the glaze. In a small saucepan over medium heat, combine the pomegranate juice, espresso, honey, apple cider vinegar, minced garlic, and red pepper flakes. Cook for 8 to 10 minutes until reduced and slightly thickened.

  6. 6

Remove the chicken from the oven and brush generously with some of the glaze. Toss the carrots so they cook evenly.

  7. 7

Return the chicken and carrots to the oven and cook at 200 °C / 400 °F for 15 to 20 minutes more, until the chicken is cooked through and the carrots are tender and caramelized. Brush the chicken with more glaze halfway through this stage.

  8. 8

Transfer the chicken to a serving platter and let it rest for 5 minutes. If desired, warm the remaining glaze for 1 more minute to spoon over the top.

  9. 9

Serve the glazed chicken with the spiced carrots. Finish with chopped fresh parsley and orange zest over everything.

Chef tips

For a shinier glaze, reduce the sauce until it coats the back of a spoon. Do not add the glaze too early or the honey may burn.

Substitutions

You can use skinless chicken thighs if you prefer less fat. Tart cherry juice can replace pomegranate juice, and fresh cilantro can be used instead of parsley.
