Instructions

  1. 1

    1. Season the chicken with 3 g (1/2 tsp) salt and the black pepper. Let it rest for 10 minutes while you prepare the remaining ingredients.

  2. 2

    2. In a bowl, whisk together the garlic, ginger, white miso, honey, mandarin juice, mandarin zest, rice vinegar, soy sauce, red pepper flakes, and water until smooth.

  3. 3

    3. Heat a large oven-safe skillet over medium-high heat with 15 ml (1 tbsp) olive oil. Sear the chicken for 3 to 4 minutes per side until nicely colored.

  4. 4

    4. Reduce to medium heat, pour the mandarin-miso mixture over the chicken, and cook for 2 minutes, spooning the sauce over the pieces so it begins to thicken.

  5. 5

    5. Transfer the skillet to a preheated oven at 425°F (220°C) and roast for 12 to 15 minutes, or until the chicken is cooked through and the glaze is glossy.

  6. 6

    6. Meanwhile, heat another skillet over medium-high heat with the remaining 15 ml (1 tbsp) olive oil and the sesame oil. Add the white parts of the scallions and cook for 1 minute.

  7. 7

    7. Add the cold jasmine rice and spread it across the pan. Sprinkle with the remaining 2 g (1/2 tsp) salt and cook for 6 to 8 minutes, stirring only once or twice, until crisp golden patches form.

  8. 8

    8. Stir the green parts of the scallions and half of the sesame seeds into the rice. Mix briefly and remove from the heat.

  9. 9

    9. Remove the chicken from the oven and let it rest for 3 minutes. If the sauce is too thin, place the skillet over medium heat for 1 to 2 more minutes until slightly reduced.

  10. 10

    10. Spoon the crispy rice onto plates, top with the glazed chicken, and finish with the remaining sesame seeds and a little extra mandarin zest if desired.

Chef tips

Use thoroughly chilled rice for the best crispy texture. If your skillet is not oven-safe, transfer the chicken and sauce to a baking dish before roasting at 425°F (220°C).

Substitutions

You can swap the mandarin juice for sweet orange juice, though the flavor will be less floral. Jasmine rice can be replaced with cooked long-grain rice. For a gluten-free version, use certified gluten-free miso and soy sauce.
