Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Season the chicken thighs with 4 g (3/4 tsp) salt, black pepper, 1 tsp of the smoked paprika, cumin, and half of the minced garlic.

  2. 2

    2. In a small bowl, whisk together the tamarind paste, honey, soy sauce, apple cider vinegar, water, cornstarch, and the remaining 1 tsp smoked paprika until smooth.

  3. 3

    3. Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 3 to 4 minutes per side until deeply golden.

  4. 4

    4. Reduce the heat to medium, pour the tamarind mixture into the skillet, and gently turn to coat the chicken. Cook for 1 minute, allowing the glaze to begin thickening.

  5. 5

    5. Transfer the skillet to the oven and roast for 12 to 15 minutes at 220 °C / 425 °F, or until the chicken is fully cooked and the center reaches 74 °C / 165 °F.

  6. 6

    6. Meanwhile, heat the remaining 1 tbsp olive oil with the butter in another skillet over medium heat. Add the red onion and cook for 3 minutes.

  7. 7

    7. Stir in the corn, the remaining garlic, and the remaining 2 g (1/4 tsp) salt. Sauté for 5 to 6 minutes until the corn is tender and lightly caramelized.

  8. 8

    8. Turn off the heat under the corn and stir in the cilantro, lime zest, and lime juice. Taste and adjust salt if needed.

  9. 9

    9. Remove the chicken from the oven and spoon the glaze from the skillet over the top. Let it rest for 3 minutes so the juices can settle.

  10. 10

    10. Serve the glazed chicken over or beside the cilantro corn, making sure to spoon plenty of tamarind sauce from the skillet over each portion.

Chef tips

If your tamarind paste is very concentrated, add 1 extra tbsp water to loosen the glaze. For better browning, avoid moving the chicken during the initial sear.

Substitutions

You can use chicken breast instead of thighs, reducing oven time depending on thickness. Parsley can replace cilantro, and mild molasses can replace part of the honey for a deeper flavor. For a dairy-free version, swap the butter for extra olive oil.
