Instructions

  1. 1

    1. Preheat the oven to 220°C / 425°F. Line a baking tray with parchment paper or lightly grease it with some of the olive oil.

  2. 2

    2. In a bowl, mix the chopped spinach with the cottage cheese, 1/2 teaspoon smoked paprika, a pinch of salt, a pinch of black pepper, and the zest of half the lemon.

  3. 3

    3. Place the thin chicken breast cutlets on a board. Season them with half of the remaining salt, black pepper, and the rest of the smoked paprika. Divide the spinach and cottage cheese filling among the cutlets, roll them up carefully, and place them seam-side down on the tray. Secure with toothpicks if needed.

  4. 4

    4. Drizzle the chicken rolls with 1 tablespoon olive oil and bake for 20 to 22 minutes at 220°C / 425°F, or until fully cooked and the center reaches a safe internal temperature.

  5. 5

    5. While the chicken bakes, heat a small skillet over medium heat. Add the white beans, 1 teaspoon olive oil, cumin, a pinch of salt, and black pepper. Cook for 8 to 10 minutes, stirring occasionally, until golden and lightly crisp on the outside.

  6. 6

    6. In a medium saucepan, heat the remaining teaspoon of olive oil over medium heat. Add 1 minced garlic clove and cook for 30 seconds. Stir in the rinsed quinoa and toast for 1 minute. Add the chicken broth or water and a pinch of salt. Bring to a boil, reduce the heat, cover, and cook for 15 minutes or until the liquid is absorbed. Turn off the heat and let it rest for 5 minutes. Fluff with a fork and mix in half of the chopped parsley.

  7. 7

    7. For the sauce, combine the Greek yogurt, 2 very finely minced garlic cloves, the remaining parsley, cilantro, lemon juice, dried oregano, a pinch of salt, black pepper, and 1 tablespoon water if you want a looser texture.

  8. 8

    8. Remove the chicken rolls from the oven and let them rest for 3 minutes. Serve a bed of herbed quinoa, top with the chicken rolls, add the crispy white beans, and finish with the yogurt chimichurri sauce on top or on the side.

Chef tips

For easier rolling, cover the chicken cutlets with plastic wrap and gently pound them to an even thickness. Dry the beans well before browning so they crisp up better.

Substitutions

You can swap the cottage cheese for thick ricotta or well-drained fresh cheese. Quinoa can be replaced with cooked buckwheat if you do not need the dish to be gluten-free. If you do not have cilantro, use more parsley.
