Instructions
- 1
1. Preheat the oven to 220°C / 425°F. Line a sheet pan with parchment paper or lightly grease it.
- 2
2. Crush the pretzels into medium crumbs. Mix them on a plate with 1 teaspoon garlic powder, 1/2 teaspoon black pepper, and 1/2 teaspoon kosher salt.
- 3
3. Melt 1 tablespoon of butter. Brush the salmon fillets with the melted butter and press one side into the pretzel crumbs to create the crust.
- 4
4. Place the salmon on the sheet pan with the crust facing up. Drizzle the vegetable oil around it and bake for 12 to 15 minutes at 220°C / 425°F, until the fish is cooked and the crust is golden.

5. While the salmon bakes, combine the maple syrup, hot sauce, and Dijon mustard in a small saucepan. Cook over low heat for 2 to 3 minutes until slightly thickened. Set aside.

6. In a medium skillet, melt 2 tablespoons butter over medium heat. Add the yellow onion and cook for 4 minutes until softened. Stir in the sweet corn, remaining garlic powder, 1/2 teaspoon kosher salt, and remaining black pepper; cook for 3 minutes.
- 7
7. Add the chicken broth and heavy cream to the corn skillet. Cook for 4 minutes over medium-low heat. Add the cream cheese and stir until melted. Partially blend the mixture with an immersion blender or potato masher for a rustic creamy texture.
- 8
8. In a large bowl, combine the green cabbage, apple cider vinegar, fresh dill, brown sugar, and remaining kosher salt. Toss well and let stand for 10 minutes so it softens slightly.
- 9
9. Remove the salmon from the oven and brush the top with the spicy maple glaze. Return it to the oven for 1 to 2 more minutes at 220°C / 425°F to set the glaze.
- 10
10. Spoon warm corn cream onto each plate, top with a pretzel-crusted salmon fillet, and serve with the dill cabbage slaw on the side.
Chef tips
For a crispier crust, do not fully saturate the salmon with glaze; a thin final layer is enough. If using frozen corn, thaw and drain it before cooking to avoid excess moisture.
Substitutions
You can swap the salmon for rainbow trout. Dill can be replaced with fresh chives. If you do not have cream cheese, use mascarpone in the same amount.
