Instructions

  1. 1

Preheat the oven to 220°C / 425°F. Line a small baking sheet or oven-safe skillet with parchment paper or lightly grease it with a little of the vegetable oil.

  2. 2

Place the grated sweet potato in a clean kitchen towel and squeeze out as much moisture as possible. Transfer to a bowl and mix with the egg, 30 g flour (about 1/4 cup), 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, 1 tablespoon chives, and 1 tablespoon vegetable oil.

  3. 3

Form 8 small sweet potato cakes on the prepared sheet or skillet. Press them down to compact. Bake for 20 to 25 minutes at 220°C / 425°F, flipping halfway through, until golden and crisp around the edges.

  4. 4

While the cakes bake, cook the green beans in boiling water with a pinch of salt for 4 to 5 minutes, until tender-crisp. Drain and briefly rinse under warm water or set aside.

  5. 5

In a large skillet over medium heat, cook the chopped bacon for 5 to 7 minutes until browned and crisp. Remove with a slotted spoon and reserve. Leave the rendered fat in the skillet.

  6. 6

Season the turkey medallions with the remaining salt, black pepper, remaining garlic powder, and remaining smoked paprika. Add them to the same skillet and sear for 3 to 4 minutes per side, until fully cooked. Remove and keep warm.

  7. 7

Add 1 tablespoon butter and half of the red onion to the skillet. Cook for 2 to 3 minutes until softened. Stir in the remaining 15 g flour (2 tablespoons) and cook for 1 minute, stirring constantly.

  8. 8

Gradually pour in the chicken broth and milk, whisking to prevent lumps. Add the chopped sage and cook for 3 to 5 minutes until the gravy thickens. Return the bacon to the skillet, taste, and adjust salt and pepper. Return the turkey to coat with the sauce.

  9. 9

In another skillet or saucepan, heat the remaining 1 tablespoon butter with the remaining 1 tablespoon vegetable oil over medium heat. Add the rest of the red onion and cook for 2 minutes. Add the green beans, apple cider vinegar, brown sugar, and a pinch of salt and pepper. Sauté for 2 to 3 minutes until glossy and warm.

  10. 10

Serve 2 turkey medallions per plate with plenty of bacon-sage gravy, 2 crispy sweet potato cakes, and the warm green bean salad. Finish with the remaining chives on top.

Chef tips

For crispier cakes, squeeze the sweet potato very well before mixing. If the gravy thickens too much, add 1 or 2 extra tablespoons of hot broth.

Substitutions

You can use chicken instead of turkey. Fresh sage can be replaced with 1 teaspoon dried sage. If preferred, swap the green beans for tender asparagus.
