1. Preheat the oven to 400°F / 200°C. Place the sweet potato in a baking dish and toss it with 1 tablespoon olive oil, 1/2 teaspoon salt, the dried oregano, crushed chili flakes, and a pinch of black pepper. Roast for 25 minutes at 400°F / 200°C until tender and lightly golden.

2. While the sweet potato roasts, make the crust: mix the wheat flour with 1/2 teaspoon salt. Add the cold butter and rub it in with your fingertips until sandy. Add 1 egg and the cold water little by little until a dough forms. Do not overwork it.

3. Roll out the dough and line a 24 cm / 9.5-inch tart pan. Prick the base with a fork and chill for 15 minutes.

4. In a skillet, heat 1 tablespoon olive oil over medium heat. Add the onion with a pinch of salt and cook for 12 to 15 minutes, stirring, until golden and soft. Let it cool slightly.
- 5
5. Blind-bake the tart shell for 12 minutes at 375°F / 190°C, until it looks just set and dry.
- 6
6. In a bowl, whisk the heavy cream with 2 eggs, the remaining 1/2 teaspoon salt, and the rest of the black pepper. Fold in the roasted sweet potato, golden onion, and 140 g of the grated provoleta.

8. Bake the tart for 28 minutes at 375°F / 190°C, until the center is set and the top is golden.
- 9
9. While it bakes, make the walnut chimichurri: mix the fresh parsley, toasted walnuts, garlic, 1 tablespoon olive oil, red wine vinegar, and a pinch of salt. Stir until you have a rustic sauce.
- 10
10. Let the tart rest for 10 minutes before slicing. Serve warm with the walnut chimichurri spooned over the top or on the side.
Chef tips
For a crisper crust, chill the rolled dough before blind-baking. The sweet potato should be tender but not falling apart so the filling keeps its structure.
Substitutions
You can replace provoleta with pategrás cheese or firm mozzarella. Walnuts can be swapped for almonds or toasted sunflower seeds for a different flavor profile.
