Instructions

  1. 1

    1. Preheat the grill to medium-high heat, about 450 °F to 500 °F (230 °C to 260 °C). If using metal skewers or a grill basket for vegetables, keep them nearby for easier grilling.

  2. 2

    2. In a large bowl, mix 30 ml (2 tbsp) olive oil, half of the chopped garlic, the juice of 1 lime, 1 g (1/2 tsp) lime zest, ground cumin, dried oregano, honey, 5 g (1 tsp) salt, black pepper, and smoked paprika.

  3. 3

    3. Add the beef flank steak strips to the bowl and coat them well with the marinade. Let rest for 15 minutes at room temperature while you prepare the remaining ingredients.

  4. 4

    4. For the guajillo chili butter, heat a small skillet or heatproof pan over a cooler area of the grill, around 300 °F to 350 °F (150 °C to 175 °C). Melt 45 g (3 tbsp) butter with the remaining garlic. Add the guajillo chili in small pieces and cook for 1 to 2 minutes until softened and fragrant without burning. Remove from the heat.

  5. 5

    5. Blend or mash the chili butter mixture until thick and saucy. Stir in the juice of the other lime and a pinch of salt. Keep warm.

  6. 6

    6. Toss the baby corn and red onion wedges with 15 ml (1 tbsp) olive oil and a pinch of salt. Rub the remaining 15 g (1 tbsp) butter over the baby corn to help it brown.

  7. 7

    7. Grill the baby corn and red onion for 6 to 8 minutes, turning every 2 minutes, until grill-marked and lightly charred at the edges. Transfer to a platter.

  8. 8

    8. Place the beef strips on the hot grill and cook for 3 to 4 minutes per side for medium, or until they reach an internal temperature of 135 °F to 140 °F (57 °C to 60 °C). For a more well-done finish, grill 1 to 2 minutes longer per side.

  9. 9

    9. Remove the beef from the grill and let it rest for 5 minutes on a board or warm plate. Then spoon most of the guajillo chili butter over the top.

  10. 10

    10. Serve the beef strips with the grilled baby corn and red onion. Finish with fresh cilantro, a little more lime zest, and the remaining guajillo chili butter on top or on the side.

Chef tips

For a smokier flavor, lightly toast the guajillo chili before adding it to the butter, just a few seconds so it does not turn bitter. The flank steak can also be grilled whole and sliced afterward.

Substitutions

You can substitute the flank steak with skirt steak or bavette. If baby corn is unavailable, use pieces of sweet corn on the cob. Cilantro can be replaced with fresh parsley.
