1. Preheat the oven to 220 °C / 425 °F. Toss the eggplant cubes with 2 tablespoons olive oil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1 teaspoon oregano. Spread on a baking tray and roast for 25 minutes, stirring halfway through, until golden and tender.
- 2
2. While the eggplant roasts, heat 2 tablespoons olive oil in a wide skillet or shallow pot over medium heat. Add the onion and red bell pepper and cook for 8 minutes until softened. Stir in the garlic, paprika, and cumin; cook 1 minute more.
- 3
3. Add the chopped tomatoes to the skillet along with 1 teaspoon salt and the remaining black pepper. Cook for 10 minutes, stirring occasionally, until a juicy base forms.
- 4
4. Add the corn kernels and hot vegetable broth. Cook over medium-low heat for 8 minutes so the corn softens and the stew thickens slightly.
- 5
5. Pour in the white wine and cook for 2 minutes so the alcohol evaporates. Add the roasted eggplant and half of the fresh basil. Stir gently and cook 5 minutes more to blend the flavors.

6. In a separate small skillet, heat the remaining tablespoon of olive oil over medium heat. Add the crumbled marraqueta crumb with the remaining teaspoon of oregano and a pinch of salt. Toast for 3 to 4 minutes, stirring, until golden and crisp.

7. Taste the tomaticán and adjust with the remaining salt if needed. Remove from the heat, scatter the crumbled goat cheese over the top, and let it rest for 2 minutes so it softens slightly from the heat of the stew.

8. Serve the tomaticán hot, finished with the oregano marraqueta crumbs and the remaining fresh basil on top.
Chef tips
For deeper flavor, let some of the tomato and eggplant pieces lightly caramelize on the bottom of the pan before stirring. It gives the stew a more rustic homemade character.
Substitutions
You can replace the goat cheese with firm fresh cheese or mild chanco cheese. If you do not have marraqueta, use day-old crusty bread. For an alcohol-free version, replace the white wine with the same amount of extra vegetable broth.
