Creamy Chilean Reineta and Cranberry Bean Tomaticán with Basil and Marraqueta Crust

An original Chilean-inspired recipe that reimagines tomaticán as a baked dish: a juicy stew of tomato, corn, cranberry beans, and seared reineta, finished with queso chanco, fresh basil, and a crisp golden marraqueta topping.

Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F. Lightly grease a medium baking dish with a little of the vegetable oil.

  2. 2

Season the reineta cubes with 1/2 teaspoon salt, black pepper, and 1/2 teaspoon merken.

  3. 3

Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Sear the reineta for 1 to 2 minutes per side, just until lightly golden. Transfer to a plate so it does not overcook.

  4. 4

In the same skillet, add the remaining tablespoon of vegetable oil and sauté the onion for 5 minutes, until translucent. Add the garlic and green chili and cook 1 minute more.

  5. 5

Add the tomato paste, dried oregano, and the remaining merken. Cook for 1 minute, stirring, to deepen the flavor.

  6. 6

Pour in the white wine and scrape the bottom of the skillet. Cook for 2 minutes until the alcohol partially reduces.

  7. 7

Add the chopped tomatoes, hot stock, corn kernels, and cooked cranberry beans. Cook over medium heat for 10 minutes, stirring occasionally, until you have a thick but juicy stew. Adjust with the remaining salt if needed.

  8. 8

Turn off the heat and stir in half of the fresh basil and 60 g of the grated queso chanco. Gently fold in the seared reineta so it is evenly distributed without breaking up too much.

  9. 9

Transfer the mixture to the baking dish. Top with the remaining grated queso chanco.

  10. 10

In a bowl, mix the marraqueta crumbs with the melted butter. Scatter this mixture over the cheese to create an even crust.

  11. 11

Bake for 18 to 20 minutes at 200 °C / 400 °F, until the crust is golden and the filling is bubbling around the edges.

  12. 12

Let rest for 5 minutes out of the oven. Finish with the remaining fresh basil on top and serve hot.

Chef tips

If the tomatoes are very acidic, add 1 teaspoon of sugar to the stew. For an extra crisp crust, broil for 2 to 3 additional minutes, watching closely.

Substitutions

You can replace reineta with firm hake or conger eel. If queso chanco is unavailable, use any semi-hard melting cheese. Basil can be replaced with cilantro for a fresher, more traditional profile.
