Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Lightly grease a baking tray or rectangular pan with 1 tablespoon vegetable oil.

  2. 2

    2. Cook the potato in water with a pinch of salt for 10 to 12 minutes, until tender but not falling apart. Drain well and mash in a large bowl.

  3. 3

    3. Add the cooked black beans to the bowl and mash them partially with the potato, keeping some texture in the mixture.

  4. 4

    4. Add the chopped onion, 2 minced garlic cloves, ground oats, the beaten egg, 1 teaspoon sweet paprika, ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix very well until you get a firm mixture.

  5. 5

    5. Transfer the mixture to the pan or shape it into a compact block on the tray. Press with a spoon to level it. Drizzle or brush with 1/2 tablespoon vegetable oil.

  6. 6

    6. Bake for 20 to 25 minutes at 220 °C / 425 °F, until the top is golden and the edges look crisp.

  7. 7

    7. Meanwhile, make the sauce. Heat the remaining 1/2 tablespoon vegetable oil in a skillet over medium heat. Add 1 minced garlic clove and cook for 30 seconds.

  8. 8

    8. Add the crushed tomato, vinegar, 1/2 teaspoon sweet paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 8 to 10 minutes, stirring, until thick and rustic.

  9. 9

    9. Turn off the heat and stir the chopped parsley into the sauce.

  10. 10

    10. Let the stack rest for 5 minutes after baking. Cut into portions and serve hot with the rustic tomato garlic sauce on top or on the side.

Chef tips

If the mixture feels too wet, add 1 or 2 extra tablespoons of ground oats. For a crispier finish, you can turn on the broiler for the last 2 minutes, watching closely.

Substitutions

You can replace black beans with cooked pinto beans or red beans. Parsley can be swapped for cilantro. For a gluten-free version, use certified gluten-free oats.
