Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking dish or oven-safe skillet with 1 tablespoon of oil.

  2. 2

    2. Cook the potato in water with a pinch of salt for 10 to 12 minutes, until tender but not falling apart. Drain and set aside.

  3. 3

    3. Meanwhile, heat the remaining tablespoon of oil in a skillet over medium heat. Sauté the onion for 4 minutes, then add the garlic and cook 30 seconds more.

  4. 4

    4. Add the chopped Swiss chard, sweet paprika, dried oregano, remaining salt, and black pepper. Cook for 4 to 5 minutes, stirring, until the chard softens and most of the moisture cooks off.

  5. 5

    5. In a large bowl, combine the bread cubes with the milk and let stand for 2 minutes so the bread softens. Add the beaten eggs, cooked potato, the sautéed chard and onion mixture, and 40 g of the grated cheese. Mix gently to combine without fully mashing the potato.

  6. 6

    6. Transfer the mixture to the prepared dish and spread it evenly, pressing lightly with a spoon.

  7. 7

    7. In a small bowl, mix the oats with the remaining 40 g grated cheese. Sprinkle this mixture over the top to create the crust.

  8. 8

    8. Bake for 25 to 30 minutes at 200 °C / 400 °F, until the top is golden and the center looks set.

  9. 9

    9. Let rest for 5 minutes before slicing and serving, so the bake can firm up and portion more neatly.

Chef tips

For a more rustic texture, mash only part of the potato when mixing. For a deeper golden top, place the dish on the upper oven rack for the last 3 minutes, watching closely so it does not burn.

Substitutions

You can replace Swiss chard with spinach or beet greens. The grated cheese can be any affordable semi-hard cheese. If you do not have oats, use breadcrumbs instead, keeping the gluten allergen in mind.
