Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Place the cauliflower on a baking tray or dish, add a pinch of the salt, and bake for 15 minutes, until tender and slightly dry on the surface.

  2. 2

    2. Meanwhile, mix the plain yogurt, grated and squeezed cucumber, lemon juice, ground cumin, and a pinch of salt in a bowl. Chill the sauce until ready to serve.

  3. 3

    3. Finely chop the roasted cauliflower or mash it with a fork until you get a coarse texture, not a completely smooth puree.

  4. 4

    4. In a large bowl, combine the cauliflower, rolled oats, grated cheese, beaten egg, chopped onion, garlic, parsley, sweet paprika, the remaining salt, and black pepper. Mix well until a moist mixture forms that can be shaped.

  5. 5

    5. Let the mixture rest for 5 minutes so the oats can absorb some of the moisture.

  6. 6

    6. Shape the mixture into 8 evenly sized patties using slightly damp hands.

  7. 7

    7. Heat the vegetable oil in a large skillet over medium heat. Cook the patties for 3 to 4 minutes per side, until golden and firm. If you like, keep them warm in the oven at 100 °C / 210 °F while you finish the rest.

  8. 8

    8. Serve the patties hot with the rustic cucumber sauce on top or on the side.

Chef tips

If the mixture feels too wet, add 1 or 2 extra tablespoons of oats and let it rest 2 more minutes before shaping the patties.

Substitutions

You can swap parsley for cilantro or chives. The semi-hard cheese can be replaced with any affordable melting grated cheese. If you do not have lemon, use a few drops of mild vinegar in the sauce.
