Instructions

  1. 1

    1. Place the day-old bread in a large bowl and pour the milk over it. Let it soak for 8 minutes until fully softened.

  2. 2

    2. Meanwhile, cook the peas in boiling water for 3 to 4 minutes until tender. Drain and lightly mash them with a fork, keeping some texture.

  3. 3

    3. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the onion and 1 garlic clove, and cook for 5 minutes until softened. Stir in the ground cumin, sweet paprika, 1/2 teaspoon of salt, and black pepper. Cook for 30 seconds more and remove from the heat.

  4. 4

    4. Gently squeeze the soaked bread if there is excess milk, then mix it with the mashed peas, the cooked onion and spices, the beaten egg, and the wheat flour. Mix well until you have a shapeable mixture.

  5. 5

    5. Divide the mixture into 8 equal patties and flatten them slightly with your hands.

  6. 6

    6. Heat the remaining tablespoon of vegetable oil in the same skillet over medium heat. Cook the patties for 4 to 5 minutes per side until golden and firm.

  7. 7

    7. For the sauce, place the plain yogurt in a small saucepan with the remaining garlic clove, the fresh mint, the lemon juice, the remaining 1/2 teaspoon of salt, and the water if you want a looser texture. Warm over very low heat for 1 to 2 minutes, without letting it boil.

  8. 8

    8. Serve the patties hot with the warm sauce on top or on the side. If you want to keep them warm, place them in an oven at 200 °F / 95 °C for up to 10 minutes before serving.

Chef tips

If the mixture feels too wet, add 1 extra tablespoon of wheat flour. If it feels too dry, add 1 or 2 tablespoons of milk. Browning them over medium heat helps prevent breaking.

Substitutions

You can use whole wheat or white bread. Fresh mint can be replaced with fresh parsley, and peas with cooked young broad beans in a similar amount. Plain yogurt can be replaced with lactose-free yogurt if needed.
