Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Place the bread cubes on a tray, toss them with 1 tablespoon vegetable oil, and bake for 8 to 10 minutes until dry and golden. Let them cool, then crush into coarse crumbs.
- 2
Meanwhile, cook the potatoes in water with a pinch of salt for 12 to 15 minutes until tender. During the last 3 minutes, add the peas to the same pot. Drain well and mash the potatoes and peas together into a rustic mash.
- 3
Add the grated onion, 1 chopped garlic clove, the egg, all-purpose flour, half of the sweet paprika, ground cumin, 3/4 of the toasted bread crumbs, 1/2 teaspoon salt, and black pepper to the mash. Mix until a shapeable mixture forms. If it feels too soft, add the remaining crumbs.
- 4
Shape into 8 medium patties and place them on a plate. Let them rest for 5 minutes so they firm up.
- 5
For the sauce, heat 1 tablespoon vegetable oil in a skillet over medium heat. Add the sliced onion and cook for 6 to 8 minutes until softened and lightly golden. Stir in the remaining garlic, the rest of the sweet paprika, and the dried oregano, and cook for 30 seconds.
- 6
Add the crushed tomato, water, and 1/2 teaspoon salt. Cook the sauce over medium-low heat for 8 to 10 minutes, stirring occasionally, until thick and warm.
- 7
In another large skillet, heat the remaining 1 tablespoon vegetable oil over medium heat. Cook the patties for 3 to 4 minutes per side until deeply golden and firm.
- 8
Serve the patties hot with the warm onion paprika sauce on top or on the side. Finish with chopped parsley.
Chef tips
Drain the potatoes and peas very well so the patties do not fall apart. For an even crispier texture, coat the patties lightly with some extra toasted bread crumbs before pan-searing.
Substitutions
You can replace the peas with cooked corn or well-drained cooked lentils. Parsley can be swapped for cilantro. If you do not have crushed tomato, use grated fresh tomato and cook the sauce a few extra minutes.
