Instructions

1. Place the sorghum in a pot with 720 ml (3 cups) water and 1/2 teaspoon salt. Bring to a boil, reduce the heat, cover, and cook for 30 minutes until tender and most of the liquid is absorbed. Let it rest for 5 minutes and cool slightly.
- 2
2. While the sorghum cooks, grate the zucchini, mix it with a pinch of salt, and let it sit for 5 minutes. Then squeeze it with your hands or a clean towel to remove excess moisture.
- 3
3. In a skillet, heat 1 tablespoon vegetable oil over medium heat. Sauté half of the onion and half of the garlic for 3 to 4 minutes until softened. Set aside for the patty mixture.

4. In a large bowl, mix the cooked sorghum, drained zucchini, sautéed onion and garlic, grated cheese, beaten egg, wheat flour, parsley, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and ground cumin. Mix well until you have a moist mixture that can be shaped. Let it rest for 5 minutes.
- 5
5. Shape the mixture into 8 compact patties with your hands. For more even cooking, you can place them on a tray and bake them for 10 minutes at 200 °C / 400 °F before browning, though this step is optional.
- 6
6. Heat 1 tablespoon vegetable oil in a large skillet over medium heat. Cook the patties for 3 to 4 minutes per side until golden and firm. Transfer them to a plate and keep warm.
- 7
7. For the sauce, add the remaining tablespoon of vegetable oil to the same skillet. Add the remaining onion and garlic and cook for 2 to 3 minutes over medium heat until softened.
- 8
8. Add the crushed tomato, sugar, dried oregano, the remaining 1/4 teaspoon black pepper, and the remaining salt. Cook the sauce for 8 minutes over medium-low heat, stirring occasionally, until slightly thickened.
- 9
9. Serve the patties hot with the warm tomato garlic sauce spooned over the top or on the side.
- 10
10. If you choose to reheat the patties in the oven, warm them at 180 °C / 350 °F for 8 minutes before serving.
Chef tips
Draining the zucchini well is key so the patties do not fall apart. If the mixture feels too wet, add 1 extra tablespoon of wheat flour. If it feels too dry, add 1 tablespoon of water.
Substitutions
You can replace the sorghum with cooked rice or cooked bulgur in a similar amount. Parsley can be swapped for cilantro. The semi-hard cheese can be replaced with any affordable grated cheese that melts well.
