Instructions

  1. 1

Place each sweet potato between two chopsticks or spoon handles and make thin crosswise cuts without slicing all the way through, creating a hasselback fan. Pat the surface dry.

  2. 2

Preheat the Air Fryer to 180°C / 350°F for 3 minutes.

  3. 3

In a small bowl, mix the olive oil with half of the salt, black pepper, garlic powder, and smoked paprika. Brush the sweet potatoes, making sure some of the mixture gets into the cuts.

  4. 4

Cook the sweet potatoes in the Air Fryer basket at 180°C / 350°F for 20 minutes.

  5. 5

Meanwhile, stir the melted butter with the white miso, lime zest, and 10 ml (2 tsp) lime juice until smooth. In another bowl, mix the Greek yogurt with 10 ml (2 tsp) lime juice, 5 ml (1 tsp) honey, and a pinch of salt.

  6. 6

Carefully fan open the cuts slightly and brush the miso butter in between the slices and over the top. Return to the Air Fryer and cook at 190°C / 375°F for 8 to 10 more minutes, until the center is tender and the edges are golden.

  7. 7

Mix the chopped peanuts with the chives, the remaining honey, and the red pepper flakes, if using.

  8. 8

Serve the sweet potatoes hot with the yogurt cream spooned over the top or on the side. Finish with the crunchy peanut-chive mixture and add a little more lime zest if desired.

Chef tips

For safer slicing, place the sweet potato on a board and use chopsticks as a knife stop. If your sweet potatoes are very thick, add 3 to 5 extra minutes of cooking time.

Substitutions

You can swap the peanuts for sunflower seeds to avoid peanuts. Greek yogurt can be replaced with thick plain yogurt, and butter can be replaced with vegetable oil for a dairy-free version, though the final texture will change.
