Instructions
- 1
Preheat the air fryer to 180 °C / 350 °F for 3 minutes.
- 2
Trim off the tough stalks and any damaged outer layer from the fennel bulbs. Cut each bulb into 4 thick wedges, keeping the base attached so each piece holds together like a fan.
- 3
In a large bowl, toss the fennel wedges with 1 tablespoon olive oil (15 ml), salt, and black pepper until evenly coated.
- 4
Arrange the fennel in the air fryer basket in a single layer. Cook at 180 °C / 350 °F for 10 minutes, turning carefully halfway through.
- 5
Meanwhile, in a small bowl mix the grated parmesan, ground almonds, breadcrumbs, lemon zest, garlic powder, chopped parsley, and the remaining 1 tablespoon olive oil (15 ml) until the mixture looks sandy and lightly moistened.
- 6
Open the air fryer and drizzle the fennel with the lemon juice. Press the crust mixture onto the top of each fennel fan.
- 7
Return the fans to the air fryer and cook at 190 °C / 375 °F for 8 more minutes, or until the fennel is tender when pierced and the crust is golden and crisp.
- 8
Transfer to a platter, finish with a little extra fresh parsley if desired, and serve hot.
Chef tips
If your air fryer is small, cook in two batches so the fennel browns properly. Pressing on the crust after the first cook helps it stick better.
Substitutions
You can swap parmesan for grana padano. Parsley can be replaced with fresh dill. For a gluten-free version, use gluten-free breadcrumbs.
