Instructions

  1. 1

    Preheat the Air Fryer to 190 °C / 375 °F for 3 minutes.

  2. 2

Wash the pears, cut each into 8 wedges, and remove the seeds. Make 3 or 4 shallow cuts on each wedge without slicing all the way through so they open slightly like a fan while cooking.

  3. 3

Pat the halloumi dry with paper towels and cut it into 8 thick batons roughly the same size as the pear wedges.

  4. 4

In a small bowl, mix the olive oil, lemon zest, lemon juice, chopped rosemary, black pepper, and salt. Keep the honey separate for finishing.

  5. 5

Brush the pear wedges and halloumi batons with the olive oil, lemon, and rosemary mixture.

  6. 6

Arrange the pears and halloumi in the Air Fryer basket in a single layer, leaving a little space between the pieces. Cook at 190 °C / 375 °F for 8 to 10 minutes, flipping the halloumi halfway through, until the cheese is golden and the pears are tender at the edges.

  7. 7

Meanwhile, in a small bowl combine the honey with the chopped pistachios and, if using, the red pepper flakes.

  8. 8

Transfer the pears and halloumi to a serving platter. Arrange one halloumi baton next to several fanned pear wedges. Spoon the honey-pistachio mixture over the top.

  9. 9

Finish with a little extra lemon zest and serve immediately while warm and crisp.

Chef tips

Use firm pears so they hold their shape. If your halloumi releases a lot of moisture, pat it very dry before cooking for better browning. Do not overcrowd the basket so air can circulate properly.

Substitutions

You can swap the pistachios for walnuts or almonds if you do not need to avoid specific tree nuts. Halloumi can be replaced with firm paneer, though the result will be less salty and less springy. Honey can be replaced with maple syrup for a different flavor profile.
