Instructions
- 1
Preheat the air fryer to 190°C / 375°F for 3 minutes.
- 2
Make parallel cuts in each carrot every 1/8 to 1/4 inch, without cutting all the way through the bottom so the carrot keeps its fan shape. Mix 15 ml (1 tbsp) olive oil with the honey, 1/2 tsp ground cumin, smoked paprika, 1/2 tsp salt, and black pepper. Brush the carrots well with this mixture, making sure some gets into the cuts.
- 3
Arrange the carrots in the air fryer basket in a single layer. Cook at 190°C / 375°F for 10 minutes. Carefully fan them open a bit, turn if needed, and cook for 6 to 8 minutes more at 190°C / 375°F until tender, browned, and caramelized at the edges.
- 4
While the carrots cook, combine the labneh, Greek yogurt, lemon zest, lemon juice, 1/4 tsp ground cinnamon, the remaining 1/2 tsp ground cumin, and a pinch of the remaining salt in a bowl. Whisk until thick and spreadable.
- 5
For the dukkah, heat a small skillet over medium heat. Add the pumpkin seeds, sunflower seeds, rolled oats, coriander seeds, and white sesame seeds. Toast for 2 to 3 minutes, stirring constantly, until fragrant. Transfer to a board or mortar, add a pinch of the remaining salt, and chop coarsely for a crunchy texture.
- 6
In the same skillet, add the remaining 15 ml (1 tbsp) olive oil and the date strips. Cook over medium heat for 1 to 2 minutes, stirring, until warmed through, glossy, and lightly golden.
- 7
Spread the spiced labneh mixture on a serving platter. Arrange the carrot fans on top, scatter over the golden dates, and finish with the seed dukkah and chopped fresh mint.
- 8
Serve right away while warm, so the caramelized carrots contrast with the cool labneh and crunchy seeds.
Chef tips
To make fan-cutting easier, place each carrot between two chopsticks or wooden spoon handles while slicing so you do not cut all the way through. If your carrots are very thick, add 2 to 3 extra minutes of cooking time.
Substitutions
You can swap the labneh for whipped cream cheese or thick Greek yogurt. Honey can be replaced with maple syrup, and mint with parsley or dill. If you do not have coriander seeds, use an extra pinch of cumin instead.
