Instructions

  1. 1

    Preheat the oven to 175 °C / 350 °F. Grease and line a loaf pan about 23 x 13 cm / 9 x 5 inches.

  2. 2

In a large bowl, mash the ripe bananas until mostly smooth with a few small lumps for texture.

  3. 3

Add the melted butter to the mashed bananas and stir until well combined.

  4. 4

Mix in the sugar, eggs, and vanilla extract, stirring with a spatula or whisk until smooth and combined.

  5. 5

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

  6. 6

Add the dry ingredients to the wet mixture and stir just until no visible flour remains; do not overmix.

  7. 7

Pour the batter into the prepared pan and lightly smooth the top.

  8. 8

Bake at 175 °C / 350 °F for 55 to 60 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.

  9. 9

Let the banana bread cool in the pan for 10 minutes, then remove it and cool completely on a rack before slicing.

Chef tips

Use very ripe bananas with dark spots for classic flavor and a moister crumb. If the top browns too quickly, loosely tent it with foil during the last 15 minutes of baking.

Substitutions

You can use salted butter and omit the added salt. White sugar can be replaced with brown sugar for a deeper flavor, although the most traditional version is usually made with white sugar.
