Instructions

  1. 1

Preheat the air fryer to 360°F (180°C) for 3 minutes.

  2. 2

Cut the endives in half lengthwise and, if desired, remove part of the tough core to soften the bitterness. Mix 1 tablespoon olive oil, Dijon mustard, 1 teaspoon honey, salt, and black pepper, then brush this mixture over the cut side of the endives.

  3. 3

Place the endives in the air fryer basket cut side up. Cook at 360°F (180°C) for 8 minutes, until tender with lightly golden edges.

  4. 4

While they cook, toss the diced pear in a bowl with the balsamic vinegar, the remaining 1/2 tablespoon honey, and the fresh thyme leaves.

  5. 5

In another bowl, toss the walnuts with the remaining 1 tablespoon olive oil and the ground cinnamon.

  6. 6

When the endives have 4 minutes left, open the air fryer, spoon the pear mixture over the endives, and add the walnuts around them. Cook again at 360°F (180°C) for 4 more minutes.

  7. 7

Transfer the endives and pears to a serving platter. Scatter the crumbled gorgonzola on top so it softens from the residual heat.

  8. 8

Serve the boats warm, finishing with the crisp spiced walnuts on top and, if desired, an extra pinch of thyme.

Chef tips

If your endives are very large, cut each half into two pieces for smaller portions. Add the gorgonzola at the end to keep its creamy texture and prevent it from fully melting.

Substitutions

You can replace the gorgonzola with mild blue cheese or feta for a different result. Walnuts can be swapped for pecans if preferred. For a less sweet profile, use a firm apple instead of pear.
