Instructions

  1. 1

    1. Peel the celeriac and cut it into sticks about 1/2 inch thick. Pat them very dry with a kitchen towel or paper towels to remove excess moisture.

  2. 2

    2. In a large bowl, combine the breadcrumbs, grated Parmesan, chopped rosemary, garlic powder, sweet paprika, 3 g salt, and black pepper.

  3. 3

    3. Place the beaten egg in a second bowl. Add the celeriac sticks to the egg and toss until lightly coated. Then transfer them to the breadcrumb-Parmesan mixture, pressing gently so the crust adheres.

  4. 4

    4. Drizzle or toss the coated sticks with the olive oil. Preheat the air fryer to 390°F / 200°C for 3 minutes.

  5. 5

    5. Arrange the sticks in the air fryer basket in a single layer, working in batches if needed. Cook at 390°F / 200°C for 10 minutes.

  6. 6

    6. Open the basket, carefully turn the sticks, and cook for 8 more minutes at 390°F / 200°C until golden and tender inside.

  7. 7

    7. Meanwhile, make the dip: in a small bowl, mix the Greek yogurt, grated and squeezed cucumber, lemon juice, lemon zest, fresh dill, and the remaining 2 g salt.

  8. 8

    8. Serve the hot celeriac fries with the cucumber yogurt dip on the side.

Chef tips

For an even crispier crust, let the coated sticks rest for 5 minutes before cooking. Do not overcrowd the basket so the air can circulate properly.

Substitutions

You can substitute the rosemary with fresh thyme. Dill can be replaced with parsley or chives. For a gluten-free version, use gluten-free breadcrumbs.
