Instructions

  1. 1

Preheat the oven to 220°C / 425°F. On a sheet pan, toss the cauliflower with 15 ml (1 tbsp) olive oil, 2 g (1/4 tsp) salt, and a pinch of black pepper. Add 4 whole garlic cloves. Roast for 25 to 30 minutes, until the cauliflower is deeply golden and tender.

  2. 2

While the cauliflower roasts, pat the steaks dry with paper towels and season both sides with 4 g (3/4 tsp) salt and 2 g (3/4 tsp) black pepper.

  3. 3

Heat a large cast-iron or heavy skillet over medium-high heat for 2 minutes. Add 15 ml (1 tbsp) olive oil and sear the steaks for 3 to 4 minutes per side for medium, or until they reach an internal temperature of 57°C / 135°F. Remove the steaks, transfer to a plate, and loosely cover to rest for 8 minutes.

  4. 4

In the same skillet, reduce to medium heat and add 14 g (1 tbsp) butter. Add the shallot and cook for 2 minutes. Stir in the cremini mushrooms and cook for 5 to 6 minutes until they release their moisture and begin to brown. Add 2 chopped garlic cloves and the fresh thyme; cook 30 seconds more.

  5. 5

Pour in the dry sherry and scrape the bottom of the skillet to release the browned bits. Cook for 2 minutes. Add the beef broth and let it simmer for 4 to 5 minutes until slightly reduced. Stir in 14 g (1 tbsp) butter for shine, then adjust with 1 g salt and an extra pinch of black pepper.

  6. 6

Transfer the roasted cauliflower and roasted garlic cloves to a blender or food processor. Add the heavy cream and the remaining 14 g (1 tbsp) butter, then blend until silky smooth. Season with the remaining 1 g salt and black pepper to taste. Keep warm.

  7. 7

Heat another skillet over medium-high heat with the remaining 15 ml (1 tbsp) olive oil. Add the green beans and sauté for 4 minutes. Add a tablespoon of water if needed to help them soften. Stir in the lemon zest and 30 ml (2 tbsp) lemon juice and cook 1 minute more. Season with the remaining salt and pepper to taste.

  8. 8

To serve, spread the cauliflower purée on each plate, place a steak on top or alongside, spoon over the sherry mushroom sauce, and finish with the lemon green beans. Sprinkle fresh parsley over the sauce and serve immediately.

Chef tips

For a better crust, let the steaks sit at room temperature for 15 minutes before cooking and avoid moving them during the initial sear. If you want a lighter purée, blend in a small splash of hot beef broth.

Substitutions

You can use ribeye, top sirloin, or rump steak instead of strip steak. Dry sherry can be replaced with dry white wine, though the flavor will change slightly. Heavy cream can be swapped for unsweetened coconut cream for a dairy-free version, and butter can be replaced with extra olive oil.
