Instructions

  1. 1

    1. Preheat the oven to 220°C / 425°F. Place the red grapes and 4 whole garlic cloves on a small baking tray, add 15 ml (1 tbsp) olive oil, half of the chopped rosemary, 1 g (1/4 tsp) salt, and a pinch of black pepper. Toss and roast for 18 to 20 minutes, until the grapes burst and lightly brown.

  2. 2

    2. Pat the beef steak dry with paper towels. Season both sides with 5 g (1 tsp) salt and the remaining black pepper. Let it rest at room temperature while you prepare the sides, about 10 minutes.

  3. 3

    3. In a medium saucepan, heat the water and milk over medium heat until very hot but not boiling. Add 1 g (1/4 tsp) salt. Gradually whisk in the quick-cooking polenta. Cook for 5 to 7 minutes, stirring often, until thickened. Add 14 g (1 tbsp) butter, the grated Parmesan cheese, and the 2 chopped garlic cloves. Mix well, reduce the heat to low, and keep warm.

  4. 4

    4. While the polenta cooks, heat a large skillet over medium-high heat. Add 15 ml (1 tbsp) olive oil, then the zucchini. Season with 1 g (1/4 tsp) salt and the red pepper flakes if using. Cook for 4 to 6 minutes, stirring occasionally, until golden and tender. Set aside.

  5. 5

    5. In the same large skillet, heat the remaining 15 ml (1 tbsp) olive oil over high heat. When very hot, add the beef steak and sear for 3 to 5 minutes per side, depending on thickness and desired doneness. For medium, aim for an internal temperature of 63°C / 145°F. Transfer the meat to a plate and let it rest for 5 minutes.

  6. 6

    6. Reduce the skillet heat to medium. Add the balsamic vinegar and beef broth, scraping the bottom with a spoon to release the browned bits. Add the roasted grapes and garlic with their juices, the remaining rosemary, and the remaining 14 g (1 tbsp) butter. Cook for 2 to 3 minutes until the sauce is glossy and slightly thickened. Adjust salt if needed.

  7. 7

    7. Slice the beef steak into thick slices if desired. Serve a base of creamy polenta, arrange the meat on top or alongside, spoon over the roasted grape sauce, and add the golden zucchini. Finish with the chopped fresh parsley.

  8. 8

    8. Serve immediately to enjoy the hot polenta, juicy sauce, and perfectly cooked beef.

Chef tips

For a deeper sauce, lightly crush half of the roasted grapes when adding them to the skillet. If the steak is very thick, finish it in the oven at 200°C / 400°F for 3 to 5 minutes after searing.

Substitutions

You can use picanha or strip steak instead of sirloin or ribeye. Parmesan can be replaced with Grana Padano. If you do not have red grapes, use black grapes. For a dairy-free version, replace the butter with olive oil and the milk with unsweetened plant-based milk; omit the Parmesan.
