Instructions

  1. 1

    1. In a large bowl, mix the cooked and chilled jasmine rice, grated carrot, red onion, parsley, egg, breadcrumbs, Parmesan, 1 teaspoon of the curry powder, garlic powder, 3/4 teaspoon salt, black pepper, and 1 teaspoon olive oil until you have a moldable mixture.

  2. 2

    2. Take portions of the mixture, about 2 tablespoons each, flatten them in your hand, place a small cube of mozzarella in the center, and close to form a ball or croquette. Repeat until finished; you should get about 16 pieces.

  3. 3

    3. Place a little extra breadcrumbs on a plate and lightly coat each bite for a thin outer layer. Spray or brush with the remaining olive oil.

  4. 4

    4. Preheat the Air Fryer to 380 °F / 193 °C for 3 minutes.

  5. 5

    5. Arrange the bites in the basket in a single layer, leaving space between them. Cook at 380 °F / 193 °C for 12 to 14 minutes, turning halfway through, until golden and crisp.

  6. 6

    6. While they cook, make the sauce by mixing the Greek yogurt, lemon juice, honey, the remaining 1/2 teaspoon curry powder, and the remaining 1/4 teaspoon salt until smooth.

  7. 7

    7. Serve the bites hot with the mild curry yogurt on the side, and finish with the chopped toasted pistachios over the top or sprinkled onto the sauce.

Chef tips

If the mixture feels too wet, add 1 or 2 extra tablespoons of breadcrumbs. If it feels too dry, mix in 1 tablespoon of yogurt or 1 teaspoon of olive oil.

Substitutions

You can substitute jasmine rice with cooked basmati rice, Parmesan with pecorino, and pistachios with toasted almonds. Mozzarella can be replaced with Oaxaca cheese or mild scamorza.
