1. Place the peeled and half-moon sliced daikon in a bowl with 1/2 teaspoon salt. Let it rest for 10 minutes to release some moisture, then pat it very dry with paper towels.
- 2
2. Meanwhile, preheat the Air Fryer to 390°F (200°C) for 3 minutes. Lightly grease the basket with a little olive oil.
- 3
3. In a shallow dish, mix the rice flour with the garlic powder, smoked paprika, black pepper, and the remaining 1/2 teaspoon salt.
- 4
4. Put the beaten egg in a second dish. In a third dish, combine the panko with 1 teaspoon lemon zest.
- 5
5. Coat each piece of daikon first in the rice flour mixture, then in the beaten egg, and finally in the panko, pressing gently so the crust sticks well.
- 6
6. Arrange the coated bites in a single layer in the Air Fryer basket. Drizzle or brush with the 1 tablespoon olive oil.
- 7
7. Cook at 390°F (200°C) for 8 minutes. Open the basket, carefully turn the pieces, and cook for 6 to 8 minutes more at 390°F (200°C), until golden and crisp.
- 8
8. While they cook, make the cream by mixing the Greek yogurt, white miso, 1 tablespoon lemon juice, and 1 teaspoon lemon zest in a bowl until smooth.
- 9
9. Serve the hot daikon bites with the miso-lemon cream on the side or spooned over, and finish with the chopped fresh chives.
Chef tips
Drying the daikon well is key for a crisp crust. If your Air Fryer is small, cook in batches so the pieces do not overlap.
Substitutions
You can substitute daikon with watermelon radish or young turnip. Greek yogurt can be replaced with thick plain yogurt, and chives with parsley or cilantro. For a gluten-free version, use gluten-free panko.
