Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F and line a baking sheet with parchment paper. Brush or spray the paper with a little of the olive oil to prevent sticking.

  2. 2

In a large bowl, mix the cooked and cooled white rice, sweet corn, shredded cheddar cheese, red onion, egg, breadcrumbs, all-purpose flour, smoked paprika, garlic powder, 1/2 teaspoon of the salt, and a pinch of black pepper.

  3. 3

Stir well until you have a compact mixture. If it feels too wet, add a little more breadcrumbs, 1 tablespoon at a time, until you can shape the bites with your hands.

  4. 4

Shape 12 small bites or thick disks and place them on the prepared baking sheet. Brush or spray the tops with the remaining olive oil.

  5. 5

Bake for 18 to 20 minutes at 220 °C / 425 °F, flipping carefully halfway through, until golden and crisp on the outside.

  6. 6

While they bake, make the dip by mixing the Greek yogurt, lime zest, lime juice, chives, the remaining salt, and a pinch of black pepper in a small bowl.

  7. 7

Let the bites rest for 2 minutes after baking so they can set. Serve warm with the lime chive dip on the side.

Chef tips

For a crispier texture, chill the mixture for 10 minutes before shaping. You can also use a small cookie scoop for even portions.

Substitutions

You can swap the cheddar for low-moisture mozzarella or young gouda. Chives can be replaced with fresh parsley. For a bolder flavor, add an extra pinch of smoked paprika.
