Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F and line a baking tray with parchment paper. Lightly coat the paper with the olive oil to prevent sticking.

  2. 2

    2. Cook the cauliflower in boiling water with a pinch of the salt for 4 minutes, until just barely tender. Drain very well and let the steam escape for 5 minutes.

  3. 3

    3. Finely chop the cooked cauliflower and place it in a large bowl. Add the shredded cheddar cheese, ground almonds, breadcrumbs, beaten egg, half of the chopped chives, half of the garlic powder, sweet paprika, the remaining salt, and the black pepper.

  4. 4

    4. Mix well with a spoon or your hands until you get a moist but shapeable mixture. If the cauliflower released too much moisture, press the mixture lightly with a spoon to help compact it.

  5. 5

    5. Shape into 16 small bites, round or slightly oval, and place them on the prepared tray. Leave a little space between them so they brown better.

  6. 6

    6. Bake at 220 °C / 425 °F for 18 to 22 minutes, turning the bites halfway through, until golden on the outside and firm to the touch.

  7. 7

    7. While they bake, make the dip by mixing the Greek yogurt, lemon juice, the remaining chives, and the remaining garlic powder in a small bowl. Stir until creamy and smooth.

  8. 8

    8. Serve the bites hot or warm with the chive yogurt dip on the side.

Chef tips

Drain the cauliflower very well to achieve a crisp texture. For deeper color, switch on the broiler for 1 to 2 minutes at the end, watching closely.

Substitutions

You can substitute the cheddar with aged gouda or monterey jack. The ground almonds can be replaced with hazelnut meal for a toastier flavor.
