Instructions
- 1
1. In a large bowl, combine the chopped artichoke hearts, cooked brown rice, grated Parmesan cheese, 40 g panko (about 2/3 cup), the beaten egg, chives, garlic powder, 1 teaspoon lemon zest, 1/2 teaspoon salt, 1/8 teaspoon black pepper, and olive oil until the mixture holds together when pressed.
- 2
2. With slightly damp hands, shape the mixture into 12 compact bites, like small croquettes or thick patties. Place the remaining panko on a plate and lightly coat each bite for a crispier exterior.
- 3
3. Preheat the air fryer to 375°F (190°C) for 3 minutes. Lightly grease the basket or line it with perforated air fryer parchment.
- 4
4. Arrange the bites in a single layer in the basket, leaving space between them. Air fry at 375°F (190°C) for 12 to 14 minutes, carefully flipping halfway through, until golden and firm.
- 5
5. Meanwhile, make the cream by stirring together the Greek yogurt, lemon juice, fresh dill, remaining lemon zest, remaining salt, and remaining black pepper in a small bowl until smooth.
- 6
6. Serve the bites hot with the lemon dill cream on the side or spooned over the top. If desired, finish with a little extra grated Parmesan and chopped chives.
Chef tips
Drain the artichokes very well so the mixture does not become wet. If the mixture feels loose, add 1 to 2 extra tablespoons of panko before shaping the bites.
Substitutions
You can replace the brown rice with cooked quinoa. Dill can be swapped for fresh parsley, and Parmesan can be replaced with Pecorino for a sharper flavor.
