Instructions

  1. 1

    1. Preheat the air fryer to 375°F / 190°C for 3 minutes.

  2. 2

    2. In a large bowl, toss the Brussels sprouts with 15 ml olive oil, salt, and black pepper until evenly coated.

  3. 3

    3. Arrange the Brussels sprouts in the air fryer basket in a single layer, cut side up or on their sides. Cook at 375°F / 190°C for 8 minutes.

  4. 4

    4. While they cook, make the crust by combining the chopped toasted hazelnuts, grated Manchego cheese, breadcrumbs, orange zest, and garlic powder in a bowl.

  5. 5

    5. Open the air fryer, shake or stir the Brussels sprouts, and sprinkle the hazelnut-Manchego mixture over them so it sticks to the moist surface.

  6. 6

    6. Drizzle or spray the remaining 15 ml olive oil over the top and cook again at 375°F / 190°C for 5 to 6 more minutes, until the sprouts are browned and the crust is crisp.

  7. 7

    7. Meanwhile, make the warm drizzle by stirring together the orange juice, Dijon mustard, and chopped chives in a small bowl. If desired, warm it for 10 to 15 seconds in the microwave or leave it at room temperature for a gentler finish.

  8. 8

    8. Transfer the Brussels sprouts to a serving platter, spoon the orange-chive drizzle over the top just before serving, and adjust with more salt or pepper if needed.

Chef tips

Do not overcrowd the basket so the sprouts brown properly. If your air fryer is small, cook in two batches. Chop the hazelnuts finely so the crust adheres better and does not brown too quickly.

Substitutions

You can swap Manchego for pecorino or aged Parmesan. Chives can be replaced with fresh parsley. For a gluten-free version, use gluten-free breadcrumbs.
