Instructions

  1. 1

Preheat the air fryer to 390°F / 200°C for 3 minutes. Meanwhile, pat the cauliflower florets very dry with paper towels so the coating sticks better.

  2. 2

In one bowl, combine the all-purpose flour with 1/2 tablespoon of the mild curry powder, half of the salt, and the black pepper. In a second bowl, beat the eggs. In a third bowl, mix the panko, unsweetened shredded coconut, garlic powder, the remaining 1/2 tablespoon mild curry powder, and the rest of the salt.

  3. 3

Dip each cauliflower floret first into the flour mixture, then into the beaten eggs, and finally into the panko-coconut mixture, pressing lightly so the crust adheres well.

  4. 4

Place the coated cauliflower in a large bowl and drizzle with the olive oil. Toss gently so the breading stays in place. If desired, add a little oil spray on top for more even browning.

  5. 5

Arrange the breaded cauliflower in a single layer in the air fryer basket. Cook at 390°F / 200°C for 8 minutes, open the basket, turn the pieces, and cook for 6 to 8 minutes more at 390°F / 200°C until golden and crisp.

  6. 6

While the cauliflower cooks, make the sauce by stirring together the plain Greek yogurt, mayonnaise, finely grated lime zest, 2 tablespoons / 30 ml lime juice, honey, and chopped fresh cilantro in a bowl. Taste and adjust with an extra pinch of salt if needed.

  7. 7

Serve the cauliflower bites hot with the lime-cilantro sauce on the side. Garnish with a little more chopped fresh cilantro and, if you like, extra lime zest.

Chef tips

Do not overcrowd the basket; cook in batches if needed to keep the texture crisp. Cutting the florets into similar sizes helps them cook evenly.

Substitutions

You can replace the cilantro with fresh parsley if you prefer a milder flavor. Greek yogurt can be swapped for thick plain yogurt, and honey can be replaced with agave syrup for a different touch of sweetness.
