Instructions

  1. 1

    1. Preheat the air fryer to 390°F / 200°C for 3 minutes. Meanwhile, pat the romanesco florets very dry with paper towels.

  2. 2

    2. In a small bowl, mix the breadcrumbs, ground almonds, grated Parmesan cheese, half of the lemon zest, garlic powder, sweet paprika, 1/2 teaspoon salt, and black pepper.

  3. 3

    3. Place the beaten egg in a second bowl. Dip the romanesco florets into the beaten egg, then coat them in the breadcrumb-almond mixture, pressing lightly so the crust adheres well.

  4. 4

    4. Drizzle or toss the coated florets with the olive oil. Arrange them in the air fryer basket in a single layer, leaving space between them. Cook at 390°F / 200°C for 12 to 14 minutes, turning halfway through, until golden and tender inside.

  5. 5

    5. While the romanesco cooks, make the cream: in a small processor or with a fork, combine the feta cheese, Greek yogurt, lemon juice, the remaining lemon zest, chopped fresh dill, and 1/4 teaspoon salt until thick and spreadable.

  6. 6

    6. Spread the whipped feta cream on a platter or divide it among small plates. Arrange the hot romanesco bites on top.

  7. 7

    7. Finish with a drizzle of honey and a little more fresh dill. Serve immediately so the crust stays crisp.

  8. 8

    8. If you want a deeper golden crust, add 1 to 2 extra minutes in the air fryer at 390°F / 200°C, watching carefully so the almonds and Parmesan do not burn.

Chef tips

Drying the romanesco well helps the crust turn crisp. Do not overcrowd the basket; cook in batches if needed. Add the honey at the end to keep the contrast between crisp and creamy.

Substitutions

You can substitute regular cauliflower for romanesco. Dill can be replaced with parsley or chives. For a stronger flavor, use half feta and half goat cheese in the cream. For a gluten-free version, use gluten-free breadcrumbs.
