Instructions

  1. 1

Preheat the air fryer to 390°F / 200°C for 3 minutes.

  2. 2

In a large bowl, toss the kohlrabi with the olive oil, 2 g salt, black pepper, garlic powder, and smoked paprika until all the cubes are evenly coated.

  3. 3

Place the rice flour on one plate, the beaten egg on a second plate, and mix the puffed quinoa with the grated smoked cheddar on a third plate.

  4. 4

Coat each kohlrabi cube first in the rice flour, then in the beaten egg, and finally in the puffed quinoa and cheddar mixture, pressing lightly so the crust sticks.

  5. 5

Arrange the bites in a single layer in the air fryer basket. Cook at 390°F / 200°C for 8 minutes.

  6. 6

Open the air fryer, carefully turn the bites, and continue cooking at 390°F / 200°C for 6 to 8 more minutes, until the kohlrabi is tender and the crust looks golden and crisp.

  7. 7

While they cook, make the cream by mixing the Greek yogurt, Dijon mustard, honey, lemon juice, the remaining 2 g salt, and the chopped chives in a bowl.

  8. 8

Serve the kohlrabi bites hot with the sweet mustard cream on the side and finish with extra chives on top.

Chef tips

If your puffed quinoa has large pieces, lightly crush it with your hands for a more even coating. Do not overcrowd the basket so the bites crisp properly.

Substitutions

You can replace the smoked cheddar with smoked gouda. Chives can be swapped for finely chopped parsley. If you do not have rice flour, use cornstarch for a similar texture.
