Instructions

  1. 1

    1. Preheat the air fryer to 390 °F / 200 °C for 3 minutes.

  2. 2

    2. In a large bowl, mix the fine cornmeal, grated parmesan cheese, sweet paprika, garlic powder, onion powder, 3/4 teaspoon of the salt, and black pepper.

  3. 3

    3. In another bowl, whisk the egg with the olive oil until combined.

  4. 4

    4. Add the fresh okra to the egg mixture and toss so all the pieces are lightly coated.

  5. 5

    5. Dredge the okra in the cornmeal-parmesan mixture, pressing gently so the crust adheres well to each half.

  6. 6

    6. Arrange the okra in the air fryer basket in a single layer. If desired, lightly spray the tops with oil to help browning.

  7. 7

    7. Cook at 390 °F / 200 °C for 10 to 12 minutes, shaking the basket halfway through, until the okra is tender and the coating is golden and crisp.

  8. 8

    8. While it cooks, make the sauce by stirring together the plain Greek yogurt, lime zest, lime juice, fresh mint, optional honey, and the remaining 1/4 teaspoon salt in a small bowl.

  9. 9

    9. Serve the okra hot with the lime mint yogurt on the side. If you like, finish with a little extra grated parmesan on top.

Chef tips

Drying the okra very well helps the coating stick and crisp up. Do not overcrowd the basket; cook in batches if needed to keep the texture crisp.

Substitutions

You can replace the mint with cilantro or parsley. Parmesan can be swapped for pecorino. For a gluten-free version, make sure the cornmeal is certified free from cross-contact.
