Instructions

  1. 1

Wash the cucumber and cut it into 16 thick rounds. Arrange them on a plate or tray and lightly pat dry with paper towels.

  2. 2

In a bowl, mix the cottage cheese, Greek yogurt, lemon zest, lemon juice, olive oil, salt, and black pepper until you get a rustic but spreadable cream.

  3. 3

Add the chopped mint to the cream and mix again so the flavor is evenly distributed.

  4. 4

Spoon about 1 tablespoon of the cream onto each cucumber round.

  5. 5

Top each bite with the diced radishes and finish with the chopped pistachios.

  6. 6

Serve immediately to keep the cucumber crisp. If you prefer them colder, chill for 5 minutes before serving at 39 °F / 4 °C.

Chef tips

For a cleaner presentation, use a piping bag or a plastic bag with the corner snipped off to pipe the cream onto the cucumber.

Substitutions

You can swap the cottage cheese for thick ricotta and the mint for dill or chives. If you do not have pistachios, use sunflower seeds for a nut-free version.
