Ingredients

  • 4 slices (120 g) rustic bread, sliced (1/2 inch de grosor aprox.)
  • 100 g feta cheese (desmenuzado)
  • 60 g plain Greek yogurt (without sugar)
  • 1 unit (140 g) firm peach (thinly sliced finas)
  • 80 g cucumber (en medias lunas finas)
  • 15 ml olive oil (divided)
  • 10 ml lemon juice (freshly squeezed)
  • 2 g lemon zest (finely grated)
  • 6 g fresh chives (chopped fino)
  • 4 g fresh mint leaves (chopped finas)
  • 9 g sesame seeds (tostadas)
  • 5 ml honey (for terminar)
  • 1 g black pepper (freshly ground)
  • 1 g salt (solo si hace falta, the feta ya es salado)

    1. Toast the 4 slices of rustic bread in a skillet over medium heat with 1 teaspoon of olive oil for 2 minutes per side, until golden and crisp. If using the oven, toast at 220 °C / 425 °F for 4 minutes, flipping halfway through.

    2. In a bowl, mix the crumbled feta, Greek yogurt, lemon juice, lemon zest, half of the chives, half of the mint, 2 teaspoons of the olive oil, and the black pepper. Mash or blend with a fork until you get a spreadable cream with a little texture.

    3. In another bowl, combine the sliced peach and cucumber with the remaining teaspoon of olive oil, the honey, the rest of the chives, the rest of the mint, and a pinch of salt if needed. Toss gently so the peach keeps its shape.

    4. Spread the herbed feta cream over the warm toasts.

    5. Divide the peach and cucumber mixture on top, making sure each toast gets both ingredients.
