Instructions

  1. 1

Wash the mini sweet peppers, slice them lengthwise, and remove the seeds to create small boats.

  2. 2

In a bowl, combine the chopped black olives, fresh mint, lemon juice, honey, optional red pepper flakes, black pepper, and 5 ml (1 tsp) of the olive oil.

  3. 3

Heat a nonstick skillet over medium heat, about 160-180 °C / 320-356 °F surface temperature, and add the remaining 10 ml (2 tsp) olive oil.

  4. 4

Add the halloumi cheese and sear for 2 to 3 minutes, stirring, until lightly crisp on the outside.

  5. 5

Remove the skillet from the heat and toss the seared halloumi with the olive and mint mixture.

  6. 6

Fill the mini pepper boats with the mixture and serve immediately.

Chef tips

For extra contrast, chill the peppers for 5 minutes before filling. Dice the halloumi into small cubes so each bite is easier to eat.

Substitutions

You can swap the mint for parsley or basil. If you do not have halloumi, use firm panela-style cheese or grilling cheese, though the final flavor will change.
