Instructions
- 1
1. In a large bowl, mix the bread flour, granulated sugar, salt, and instant dry yeast.
- 2
2. Add the warm whole milk, 1 egg, and the softened unsalted butter. Mix until a cohesive dough forms.
- 3
3. Knead for 10 to 12 minutes, by hand or with a mixer, until the dough is smooth, elastic, and slightly glossy.
- 4
4. Place the dough in a lightly greased bowl, cover, and let rise for 75 to 90 minutes, or until nearly doubled in size.
- 5
5. While the dough rises, make the filling. In a bowl, mix the cream cheese, lime zest, lime juice, and powdered sugar until smooth and spreadable.
- 6
6. Grease a large baking pan or round baking dish.
- 7
7. Deflate the dough and roll it out on a lightly floured surface into a rectangle about 16 x 12 inches / 40 x 30 cm.
- 8
8. Brush the entire surface with the melted unsalted butter.
- 9
9. Spread the cream cheese mixture evenly over the dough, leaving a 1/2-inch border on one long side.
- 10
10. Scatter the finely chopped guava paste evenly over the top and press lightly so it adheres to the filling.
- 11
11. Roll up the dough tightly from the long side opposite the clean border, forming a log. Seal the final edge.
- 12
12. Cut the log into 10 equal pieces and place them in the prepared pan, leaving a little space between each bun.
- 13
13. Cover and let rise again for 35 to 45 minutes, until the buns look puffy.
- 14
14. Preheat the oven to 350°F / 175°C.
- 15
15. Beat the remaining egg and gently brush the tops of the buns. If desired for a creamier crumb, pour the heavy cream or milk around the buns just before baking.
- 16
16. Bake for 25 to 30 minutes at 350°F / 175°C, until golden and fully baked in the center.
- 17
17. Let rest for 10 minutes before serving so the filling can set slightly.
Chef tips
If the guava paste is very firm, warm it for 10 to 15 seconds to make it easier to chop or distribute. For a glossy finish, brush the hot buns with a little extra butter.
Substitutions
You can use lemon zest instead of lime. Guava paste can be replaced with a thick guava jam, using slightly less to avoid excess moisture. Whole milk may be swapped for reduced-fat milk, though the crumb will be a bit less rich.
