Instructions
- 1
1. Grease a rectangular or round baking pan with the melted butter and set aside. If your kitchen is cool, prepare a warm proofing spot around 75-85°F (24-29°C).
- 2
2. In a small saucepan, cook the plums with the buckwheat honey, brown sugar, lemon juice, and cinnamon over medium heat for 8 to 10 minutes, until the fruit softens and releases its juices.
- 3
3. Stir the cornstarch with the water until smooth. Add it to the saucepan and cook 1 to 2 minutes more, stirring, until you have a thick compote. Remove from the heat, fold in the toasted chopped hazelnuts, and let cool completely.
- 4
4. In a large bowl, mix the bread flour, sugar, fine salt, and instant dry yeast.
- 5
5. Add the warm milk, egg, and vanilla. Mix until a rough dough forms. Add the softened butter gradually and knead for 8 to 10 minutes, by hand or mixer, until the dough is smooth, elastic, and slightly glossy.
- 6
6. Shape into a ball, place in a lightly greased bowl, cover, and let rise for 60 to 75 minutes, until nearly doubled in size.
- 7
7. Deflate the dough and roll it out on a lightly floured surface into a rectangle about 14 x 11 inches (35 x 28 cm).
- 8
8. Spread the cooled plum and hazelnut filling evenly over the surface, leaving a 3/4-inch (2 cm) border clear along one long side.
- 9
9. Roll the dough up from the opposite long side into a firm log. Pinch the seam to seal.
- 10
10. Cut the log into 10 equal pieces and arrange them in the prepared pan, leaving a little space between each one. Cover and proof for 30 to 40 minutes, until puffy.
- 11
11. Preheat the oven to 350°F (175°C).
- 12
12. Bake the buns for 25 to 30 minutes at 350°F (175°C), until well risen and golden on top. If they brown too quickly, loosely cover with foil during the last few minutes.
- 13
13. While the buns bake, whisk the powdered sugar with the milk and vanilla until smooth and pourable.
- 14
14. Let the buns rest for 10 minutes out of the oven. Then drizzle the glaze over the still-warm buns so it settles into the swirls. Serve warm or at room temperature.
Chef tips
Toast the hazelnuts for 8 to 10 minutes at 325°F (165°C) if they are not already toasted; this gives the filling deeper flavor. Make sure the compote is fully cooled so it does not soften the dough while rolling.
Substitutions
You can replace the plums with firm nectarines or pitted cherries. Hazelnuts can be swapped for walnuts for a different flavor profile. Buckwheat honey can be replaced with another dark honey, though the taste will be less robust.
